Zhenghe white tea refers to white tea produced in Zhenghe, Fujian. Zhenghe County is one of the birthplace regions of Chinese white tea, and to this day, it stands at the pinnacle of Chinese white tea in terms of both production volume and quality. The primary tea cultivar here is the Dabai (Large White) tea tree, characterized by robust tea buds that yield a sweet and smooth taste, winning favor among tea lovers both at home and abroad.

Zhenghe White Tea: The Finest White Tea Origin

Tea cultivation in Zhenghe County dates back as early as the Tang Dynasty, reaching its peak during the Qing Dynasty, when its exceptional quality even earned it the status of tribute tea. During the Qing Dynasty, white tea production began to take root in Fuding and Zhenghe, quickly gaining popularity. Zhenghe County gradually evolved into a major production hub for Chinese white tea, maintaining a leading position in both output and quality to this day.

Zhenghe white tea is primarily made from Dabai tea trees, which belong to the large-leaf variety. It is characterized by thick tea leaves, robust buds, and prominent pekoe, making it a top-tier cultivar for crafting white tea. Crafted using only a single bud with one leaf or strictly tender buds, Zhenghe white tea is of exceptional quality. Premium Zhenghe Baihao Yinzhen (Silver Needle) consists solely of hand-picked tea buds, requiring 40,000 buds to produce just 500 g of tea, making it exceedingly rare and priced upwards of NT$2,000.

Production Method of Zhenghe White Tea

The production method for Zhenghe white tea is similar to that of general white teas, but primarily utilizes the Dabai cultivar. Harvesting takes place in April during spring, with a single bud or a single bud with one leaf being the ideal standard. Leaves harvested on rainy days, diseased leaves, and old leaves are strictly excluded. After harvesting, the leaves are spread out for a period before undergoing withering. Once withering is complete, the leaves bypass fixation (kill-green) and rolling, proceeding directly to drying to yield loose raw tea. The production method of Zhenghe white tea is straightforward yet preserves the most pristine flavors and nutrients of the tea leaves, making it arguably the most natural manufacturing process.

Brewing Guide for Zhenghe White Tea

Similar to standard white tea. Mountain spring water or mineral water is preferred. Any teaware is suitable. An ideal water temperature is 90°C. The recommended tea-to-water ratio is 1:40, using 2.5 g of Zhenghe white tea for a 100 ml teapot, which can be adjusted to personal preference. Because the leaves are unrolled, a slightly longer steeping time is required to fully draw out the flavor. Generally, the first steep takes 5 minutes, with an additional minute for each subsequent steep, allowing for about 4 to 5 infusions.
