Origin and Characteristics of Tanyang Gongfu Black Tea
The primary production area of Tanyang Gongfu Black Tea is located in Tanyang Village and its surrounding regions within Fu’an City, Fujian Province, including Zherong, Shouning, Zhouning, Xiapu, and northern Pingnan. The tea gets its name from its birthplace, Tanyang Village. High mountain elevations, heavy mists, and a mild, humid climate create an ideal environment for tea plants, yielding exceptional Tanyang Gongfu. It is one of the three major Gongfu black teas of Fujian, ranking alongside Zhenghe Gongfu and Bailin Gongfu.
Production Process of Tanyang Gongfu Black Tea
The craftsmanship behind Tanyang Gongfu Black Tea is meticulous, involving multiple intricate steps. Fu’an Dabai or Fuding Dahao tea trees are selected as the primary sources, with spring being the optimal harvesting season. The ideal harvest consists of one bud and a leaf, or one bud and two leaves. Strict quality control ensures the leaves remain intact, avoiding overly mature or damaged leaves.
The production process consists of four main steps: withering, rolling, fermentation, and drying. Withering is typically done indoors through natural withering, allowing the leaves to lose moisture and turn a dark green hue. The rolling process requires moderate pressure to release the tea juices, shaping the leaves into tight strips while preparing them for subsequent fermentation. Fermentation is a crucial step, usually controlled at around 2 hours to allow the leaves to fully oxidize, developing the black tea’s unique sweet and mellow aroma. Finally, the tea is dried at a high temperature of 100°C until the moisture content drops to about 7%, preserving its quality and ensuring easy storage.
