Among dark teas, Yunnan Pu-erh is the most famous, followed by those produced in Hunan, Hubei, and Sichuan. Hunan experiences distinct four seasons, and its rich soil composition differs greatly from Yunnan, resulting in many unique characteristics in the tea produced. Hunan dark tea is mostly made from dark rough tea as a raw material, featuring a fermentation process with a sweet wine-like aroma. It yields a lighter liquor color when brewed, yet carries a bold and commanding presence. Beyond flavor differences, Hunan dark tea is also classified into finer categories based on processing techniques. Depending on tenderness and production methods, it is further divided into dark brick tea, Fuzhuan brick tea, patterned brick tea, Qianliang teas, Tianjian, Gongjian, and Shengjian tea, providing a wider selection for different preferences.

Much like Pu-erh, premium Hunan dark tea has become a collector’s item. Prices range from tens of thousands to hundreds of thousands of dollars. Good new tea can cost thousands of RMB per 500 g. Lower-quality options can be bought for just tens of dollars, but these are mostly secondary grades like Shengjian tea.

How to Brew Hunan Dark Tea

When brewing Hunan dark tea, Yixing clay pots or porcelain pots are ideal. Spring water or well water works best, and it is recommended to let the water sit overnight before brewing. A water temperature of 100°C is optimal; using an iron kettle to boil the water works quite well. Pry off the tea leaves with a dark tea knife right before brewing rather than doing it too early. The tea-to-water ratio is 1:40—meaning for a 100 ml teapot, use 2.5 g of Hunan dark tea. Steep for about 3 minutes for the first infusion, then increase each subsequent steep by 40 seconds to 1 minute.
