If you collect natural spring water, let it rest overnight before use for a smoother taste. Before boiling, you can rinse the leaves with hot water as a substitute for the usual tea-rinsing step. Bring the water to a full boil at 100°C, then add the tea leaves. A general tea-to-water ratio is 1:50, meaning 2 grams of tea for every 100 ml of water. If you are using a 500 ml pot, use 20 grams of Puerh tea, and so on.
